A meal can be daunting when planning a party, especially one around the holidays. Often I overthink a menu and try to make it overly impressive and memorable. The more I entertain, I realize good food, no matter how complicated, is memorable. Guests will always remember a fun evening with good, homemade food. To keep my stress level under control this season, I’m switching up my Christmas party and making a slow cooker soup! What could be easier than dumping the ingredients together, turning it on and walking away? This turkey soup has festive smoky flavors, cozy sweet potatoes and brights pops of kale!

Slow Cooker Turkey, Sweet Potato + Kale Soup

For the soup
  1. 1 cup diced onion
  2. 1 cup chopped celery
  3. 1 cup chopped carrots
  4. 2 jalapeños, diced
  5. 4 garlic cloves
  6. 2 teaspoons salt
  7. 1 teaspoon black pepper
  8. 3 pounds sweet potatoes
  9. 2-3 pound bone-in turkey breast
  10. 1 smoked turkey leg
  11. 2 sprigs sage
  12. 1 sprig rosemary
  13. 1 bunch thyme
  14. 2 quart turkey/chicken/vegetable stock
  15. 1 bunch lacinato kale (4 cups chopped)
  16. 3/4 cup green onion
For the cranberry sauce
  1. 16 ounces fresh (or frozen) cranberries
  2. 1 tablespoon orange zest
  3. 1 tablespoon lime zest
  4. 1/2 cup freshly squeezed orange juice
  5. 3/4 cup honey
  6. 1 jalapeño, seeded and diced
  7. 1 cinnamon stick
For the soup
  1. In a 7-quart slow cooker, layer the onion, celery, carrots, jalapeños and garlic.
  2. Add the salt and pepper.
  3. Scrub and dry the sweet potatoes. Chop into 1/2-inch to 1-inch sized pieces and add to the cooker.
  4. Place the turkey breast and leg on top and sprinkle with salt and pepper.
  5. Using kitchen twine, bundle the sage, rosemary and thyme. Nestle into the cooker.
  6. Pour in the stock. If it does not come up to the meat, add water as needed.
  7. Cook on high 4-6 hours. If cooking longer, make sure to add the sweet potatoes midway through cooking to retain texture.
  8. While the soup is cooking, prepare the cranberry sauce (see below).
  9. Once cooked, remove meat from cooker and set aside.
  10. Remove stems from kale and roughly chop. Also chop the green onion. Add both to the soup and stir, allowing the kale to wilt slightly. Shred or cube the turkey as well as the smoked leg. Add the prepared meat back to the soup and let everything warm through.
For the cranberry sauce
  1. Bring all the ingredients to a boil in a small saucepan.
  2. Turn down to a simmer and continue to stir, ensuring the sauce isn't sticking. Simmer until thickened and the cranberries have begun to burst, 15-20 minutes.
  3. Keep warm until serving.
