I hardly ever have a “traditional” dinner. Instead, I use whatever my garden provides and make something in season. During the summer, most evenings I’m outside late and when I go inside, I crave something quick and flavorful. By default, my go-to’s are salads. I take whatever is plentiful and throw it in a bowl – ok, maybe with a bit more finesse. This year I fell in love with this broccoli and cauliflower salad. And if I can get anything with curry, I’m in. But this seriously is delicious. Greek yogurt is the perfect base for the dressing and there is no guilt in any of this! That’s how food should be: guilt free and delicious!

Ingredients
  1. 2 cups cauliflower florets
  2. 2 cups broccoli florets
  3. 1 tablespoon salt
  4. 1 cup Greek yogurt
  5. 1/4 cup lime juice
  6. 2 tablespoons pomegranate molasses
  7. 1 tablespoon yellow curry powder
  8. 1/2 teaspoon turmeric
  9. 1/2 teaspoon smoked paprika
  10. 1 teaspoon salt
  11. 1/2 teaspoon pepper
  12. 1 cup cherry tomatoes
  13. 1/4 cup white onion
  14. 1/4 cup cilantro
  15. 1/2 cup golden raisins
  16. 3/4 cup roasted cashews
Instructions
  1. Prepare a large bowl with 6 quarts of water and 3 cups of ice. Set aside.
  2. In a large kettle, bring 6 quarts of water to boil. Add one tablespoon salt and stir to dissolve.
  3. Place cauliflower in boiling water and cook until the florets just begin to soften, 3-4 minutes.
  4. Add broccoli and continue to cook until both cauliflower and broccoli are tender crisp, an additional 3-5 minutes.
  5. Remove from water and immediately place in prepared ice water. Let cool, drain and set aside.
  6. When the cauliflower and broccoli are drained and dry, place in large bowl.
  7. To prepare dressing, whisk the yogurt, lime juice, molasses, curry powder, turmeric, smoked paprika, salt and pepper. Whisk until combined and smooth.
  8. Pour dressing over cauliflower and broccoli, reserving some to add later.
  9. Mix in tomatoes, onion, cilantro.
  10. Stir and add raisins.
  11. Finish with cashews and serve.
