New Year’s concludes the holiday season, although a lot of times, I try and extend it as long as possible. As a rule of thumb, I don’t overplan for New Year’s: just a simple evening with good friends and of course champagne. A great charcuterie platter is my go to for the evening; it’s festive and so easy to put together. Everyone can nibble, sip and mingle as they please. And any great charcuterie wouldn’t be complete without some great nuts and these three are addictive. I loved testing these and eating them all (and I mean all) as nuts are my weakness. These go together in a snap and can be made a few days in advance. What could be better?

Three Spiced Nuts

Asian Sesame Almonds
  1. 1 cup raw almonds
  2. 2 tablespoons dark brown sugar
  3. 2 tablespoons tamari
  4. 3 teaspoons toasted sesame oil
  5. 1 teaspoon yellow curry powder
  6. 2 teaspoons sesame seeds
Rosemary & Sea Salt Marcona Almonds
  1. 1 cup roasted Marcona almonds
  2. 2 tablespoons olive oil
  3. 1 1/2 tablespoons minced rosemary
  4. 1/2 teaspoon garlic powder
  5. 1/2 teaspoon onion powder
  6. 2 teaspoons coarse sea salt
Sweet & Spicy Mixed Nuts
  1. 1 cup mixed raw nuts
  2. 2 tablespoons vegetable oil
  3. 1 tablespoon lemon juice
  4. 2 tablespoons dark brown sugar
  5. 3 teaspoons smoked paprika
  6. 1 teaspoon cayenne pepper
  7. 1 1/2 teaspoons salt
For the Asian Sesame Almonds
  1. Mix together all ingredients and bake at 375 degrees for 20-25 minutes, stirring every 10 minutes.
For the Rosemary & Sea Salt Marcona Almonds
  1. Mix together all ingredients and bake at 375 degrees for 15 minutes.
For the Sweet & Spicy Mixed Nuts
  1. Mix together all ingredients and bake at 375 degrees for 20-25 minutes, stirring every 10 minutes.
