Chocolate Waffle Cookies | The Gray Boxwood

The more cookies I make, the more I realize how vast the recipes are! Honestly there are endless possibilities and these waffle cookies prove that. Yes it is time to actually use your waffle iron! Ok – maybe you are one of those people that does use your waffle iron fairly regularly, but many of us don’t. Also, I will admit this recipe has not been tested on a Belgian or deep-style waffle iron and I believe works best on a traditional waffle iron. Waffle cookies are an old recipe but definitely one that is worth trying!

Ingredients
  1. 1 cup butter, melted and slightly cooled
  2. 1 1/2 cups sugar
  3. 4 eggs
  4. 1 teaspoon vanilla extract
  5. 2 cups flour
  6. 1/2 cup cocoa
  7. 1 teaspoon salt
For the ganache
  1. 1/4 cup white chocolate chips
  2. 1/2 cup heavy cream
For the cookies
  1. Preheat waffle iron.
  2. In a large bowl, mix together the butter, sugar, eggs and vanilla.
  3. Sift in the flour, cocoa and salt. Mix until no dry streaks remain.
  4. Grease the preheated waffle iron and spoon in heaping teaspoons of batter. Depending on size of waffle iron, 2-4 can be made at a time. Let bake until crispy on the edge but soft in the center, 2-5 minutes depending on the waffle maker. It could take a few tries to figure out baking time.
  5. Remove cookies and continue greasing and baking. While baking, make white chocolate ganache.
For the ganache
  1. Heat heavy cream until it just comes to a boil. Then pour over white chocolate.
  2. Let sit 1-2 minutes and stir until smooth.
  3. Drizzle over cooled waffle cookies.
  4. Sprinkle with sanding sugar or decorative sugar and enjoy!

  1. Makes 36-40 cookies

    We made these yesterday with the kids. They loved using the waffle iron to make cookies. I would say that I think there should be more white chocolate chips. We used about 3/4 a cup and it was still a very liquid consistency. Also finding a vintage waffle maker is harder than it seems. Luckily my grandma still had one!

      Wonderful to know, thank you! I should have mentioned in the video that letting the White chocolate ganache cool will help is solidify slightly. So glad you could find a waffle make and try these out!!
