Pomegranate Champagne Punch | The Gray Boxwood

People don’t make punch anymore do they? There was a craze back in the day where every house had a punch bowl and now we never use them! I don’t really know why because punches are great. They serve a crowd, can be made ahead and are ready to go as guests arrive.

I love to have a large festive bowl of beverage ready and this pomegranate version is one my favorites. Using the fruit of the season, it is refreshing and delicious. Break out that punch bowl that’s hidden in the corner of your basement or borrow your grandma’s as I’m sure they’ll have one and make this punch for Thanksgiving!

For the simple syrup
  1. 1 cup pomegranate juice
  2. 3/4 cup sugar
  3. 2 inches ginger, peeled and sliced
  4. 2 cinnamon sticks
For the punch
  1. 2 cups pomegranate seeds
  2. 2 quarts (8 cups) pomegranate juice
  3. 1 quart (4 cups) orange juice
  4. 1/2 cup Campari
  5. 1 cup dark rum
  6. simple syrup (previous recipe)
  7. 2 limes
  8. 2 oranges
  9. 1 bottle dry Champagne (or prosecco)
For the ice ring
  1. 1 cup pomegranate juice
  2. 1 cup orange juice
  3. 1/2 cup pomegranate seeds
For the ice ring
  1. Prepare the ice ring by adding all the ingredients to a small Bundt pan and freeze until fully frozen.
For the simple syrup
  1. Place all ingredients in small sauce pan and bring to boil on stove.
  2. Make sure sugar is dissolved. Remove from heat and chill until cooled.
For the punch
  1. Take pomegranate seeds out of pomegranate and set aside for garnish.
  2. Pour pomegranate juice, orange juice, Campari, rum and strained chilled simple syrup in punch bowl (you can use pitchers if you don't have a punch bowl).
  3. Peel strips of zest off limes and oranges. Thinly slice fruit and place zest, fruit and prepared pomegranate seeds in punch. At this point, the punch can be made up to a day ahead. The flavors will infuse even better.
  4. To finish the punch, add Champagne and ice ring. For an alcohol-free punch, leave out all liquor and add a lemon lime soda instead.
Notes
  1. You can buy pre-seeded pomegranates, but cost-wise it is more efficient to buy the whole fruit and seed them yourself.
